![]() ![]() Place the board down on the bench and give the bottom of the pan a thump to help release the onions. Being very careful not to burn yourself, take the pan out of the oven, place a wooden board (or serving platter) over the top and then flip the whole thing over very quickly (be confident and fast).Tuck those onions in! Place the whole pan in the pre-heated oven and cook it for 15 minutes, or until the pastry is golden and crunchy looking. After the 10 minute onion cooking time, turn off the heat of the frypan, lift off the lid and then lay the sheet of pastry over the top of the onions, tucking the sides down into the pan like a blanket.Preheat your oven to 180☌ to get it ready for the next bit. Halfway through this, lift the lid and dot the garlic in among the onions and then put the lid back on. Turn the heat down to low, cover with a lid and simmer for ten minutes to soften the onions a little. Once the caramel has simmered down to become a little thicker and slightly darker, place your onions cut side down into the pan in a pretty patterns, filling the whole pan.Sprinkle in your spices and herbs of choice Add your splash of water (a couple of tablespoons is good) and then simmer it all down to make a loose caramel. ![]() Add the brown sugar and stir to dissolve. Melt the butter in a large frypan with a metal handle until is is melted and browning.Please don't use a pan with a plastic or wooden handle, that would = disaster. Note: you need to make this in an all-metal frypan, as it will need to go in the oven. Lemon myrtle, thyme, bay, nutmeg, whatever you like.
